Abstract

This work shows chemical evidences of the influence of the cassava root species on the production of glucose after acid hydrolysis. This conclusion was taken from data where different cassava roots species were submitted to acid hydrolysis and showed different amount of glucose despite of the fact that some species came from the same local of Rio Grande do Sul. The best results were observed with the “branca” species where 100 g of the root produced 26.4 g of glucose.
