Perspectives for diversifying the Brazilian sparkling wine

Abstract

The Brazilian sparkling wine, in the last twelve years, grew in their production and marketing top 350 % and can observe the constant evolution of its quality. The objective of this paper is to present the trends in the current Market that allow exploring the good moment of Brazilian sparkling wine and expand its limits. For this, potential cultivars for their diversification, as 'Manzoni Bianco' and 'Ribolla Gialla' were identified and different regions, techniques and oenological technics inputs. One new feature is the possibility of producing in “Campanha Gaúcha”, already known for producing grapes and red wines of good quality. On the technical aspect addresses the evolution of methods "short Charmat" and "long Charmat" the production of sparkling quality, besides other techniques like microxigenation in making foam, "direct sparkling" and market trend of sparkling rose. Among the inputs, are the exchange resins, which help increase the acidity of a wine and decreasing pH. All these initiatives are important factors associated to the Brazilian sparkling wine can consolidate their place in the global scenario and reach new markets.
